Is it Doughnut, or Donut??




So, Dunkin Donuts is spelled the wrong way???
 
Why am I the last one to catch this?
 
Or is it the right way, and Doughnut is wrong?
 
I'm so confused!
 
Anyway, my husband is home Monday's, and I decided it would be fun to make him something special for breakfast. I've been wanting to make doughnuts for a while now, but have been worried about the whole 'frying' aspect. I've heard that it makes your house smell horrible, and the oil itself is pricey...
 
So I decided to look into alternative methods.
 
I learned that you can pipe the doughnuts onto a baking tray & bake them, but that seemed like a lot of work...
 
Then I found a fun recipe where you bake the doughnuts directly into muffin pans! Genius!
 


 Pumpkin Dougnut Muffins
(recipe adpated from Group Recipes)

1/2 cup sugar
1/4 cup unsalted butter, softened
eggs
1 1/2 cups canned unsweetened pumpkin
1/4 t. vanilla
1/8 cup milk
1-1/2 cups unbleached all-purpose flour 
1/2 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon pumpkin pie spice

Topping:
1/2 cup sugar 
2 teaspoons ground cinnamon
4 tablespoons butter, melted 

- Preheat your oven to 350 degrees. Grease a 12 count muffin tin with shortening and flour. Set aside.

-Combine the sugar, butter, vanilla and pumpkin in the bowl of an electric mixer. Stir to combine. Add the egg.

- Quickly whisk together the flour, baking powder, baking soda, salt and pumpkin pie spice. Slowly stir into the egg mixture, adding the milk here and there until combined. Divide into muffin cups, and bake for 20-25 minutes. Or until golden brown. A toothpick will come out clean around 10 minutes, so that isn't really a great way to test.

- While the doughnuts are baking, combine the sugar and cinnamon in a large Ziploc. Melt the butter in a shallow dish.

- Allow the doughnuts to cool for about ten minutes, then, working with one at a time, roll each in butter. Place into the Ziploc, and give it a good shake, making sure the sugar mix coats the entire muffin.


These are soooo yummy!

Dax flipped over this delicious morning treat! He shares the intense love for pumpkin that I have, which is great for me! He encourages me to be creative with my pumpkin creations, whereas my husband is begging me to pick a new flavor!

We made these this weekend and they are yummy! Not too sweet and very pumpkinny. We quadrupled the recipe and my 4 kids have been enjoying them!

I agree with "donut" being spelled wrong. I heard someone say it is spelled "doughnuts" because they are made of dough not DO.
